Ingredients (makes ±10 pieces):
- 250 g cherry tomatoes (preferably home-grown!)
- 1 clove of garlic
- 1 tablespoon olive oil
- A handful of fresh basil (or coriander)
- Salt and pepper to taste
- 1 small baguette or ciabatta
- Optional: balsamic vinegar or glaze
Instructions:
- Dice the cherry tomatoes and finely chop the basil. Mix them in a bowl.
- Crush or grate the garlic and add it to the tomato mixture, along with the olive oil, salt, and pepper. Let it sit for a few minutes.
- Slice the bread into thin rounds and toast them in a grill pan or toaster until lightly crispy.
- Spoon the tomato mixture onto the toasted bread.
- Optional: Drizzle with a bit of balsamic glaze for extra flavor.
Serve immediately as a fresh snack, light lunch, or colourful side dish.
