Ingredients (for 2–3 servings):
- 2 handfuls of fresh wild rocket (arugula)
- 1 small garlic clove
- 40 g walnuts (lightly toasted for extra flavor)
- 30 g grated Parmesan or a plant-based alternative
- 4–5 tbsp olive oil
- 1 tbsp lemon juice
- Salt & pepper to taste
- Optional: a few fresh basil leaves
Instructions:
- Wash and dry the rocket thoroughly.
- Add the rocket, walnuts, garlic, and cheese to a blender or food processor.
- Pulse a few times, then add olive oil gradually while blending until smooth.
- Add lemon juice, salt, and pepper to taste.
- Serve over pasta, use as a sandwich spread, or drizzle over roasted veggies.
